Gailtaler Almkäse g.U. – Tradition meets enjoyment
Gailtaler Almkäse g.U. is a traditional, origin-protected cheese specialty from Carinthia, produced exclusively during the summer months on 13 alpine pastures in the Gailtal valley. The foundation is fresh raw milk from cows that graze on the herb-rich alpine meadows in the Carnic and Gailtaler Alps. This special feed base gives the milk its characteristic flavor, which is reflected in the Gailtaler cheese. The production begins with milking the cows. The raw milk is heated in a copper kettle and combined with natural rennet. After cutting the curd and heating the cheese mass, it is scooped into cloths and pressed into molds. After 24 hours in a salt bath, the cheese ripens for weeks in the cheese cellar, developing its spicy and full-bodied aroma. However, the experience of Gailtaler Almkäse does not end with its production. Visitors can taste the freshly ripened cheese at the Tröpolacher Alm, often accompanied by homemade butter, farmer's bread, and other regional agricultural specialties.
