For Hannes Müller, lateral thinking is a philosophy of life. His authentic, unagitated and different way of cooking is admirable. He attaches great importance to the quality and proximity of the origin of the food. His kitchen is the best place to find the roots of good taste. There he creates something very special that is served unadulterated on the plate. The shorter the ways of the ingredients, the better, and the flavours should be as natural as possible. With his clear kitchen philosophy, he has won four Toques, and his great passion is sustainability, simplicity and the greatest possible self-sufficiency. Together with his colleague Franziskus Thurner in the kitchen and his wife Monika, he runs the Genießerhotel "Die Forelle" at Lake Weissensee.
