A festival for all senses: Sautanz on the Egger Alm with star chef Max Stiegl
On Friday, October 3, 2025, the Egger Alm invites you to a culinary event of a special kind: The Sautanz “Zur alten Käserei” brings back a nearly forgotten tradition – accompanied by none other than Max Stiegl, the multiple award-winning top chef and advocate of holistic cuisine.
What was once deeply rooted in rural life will come alive again on this day: The Sautanz was more than just a slaughter day – it was a celebration. A celebration of community, seasonality, and respect for the animal. This is precisely what they want to make palpable here: With every dish, every scent, every sound.
Tradition meets taste – here’s what you can expect:
Between 8:00 AM and 6:00 PM, dishes that are rarely served today will be prepared over an open flame with much artisanal dedication – from brain with egg to spleen strudel, boiled meat, blood sausages, heart and lung to farmer's doughnuts and bean strudel. Each dish will be served only once – so punctual arrival is essential.
There will also be selected drinks – from Sautanz white wine and Cuvée red to mulled wine, spritzer, and beer. Live music will provide the musical accompaniment, and the ambiance of the Egger Alm – rustic, alpine, and festive – will create the true atmosphere.

Born in Slovenia and rooted in Pannonia, chef Max Stiegl is known far beyond Austria's borders – not only because of his accolades but because of his uncompromising passion for cooking “from nose to tail.” At his estate in Burgenland, Purbach, he has been processing the whole animal with respect and finesse for years. His dishes combine rural authenticity with creative culinary art, and his approach is bold, honest, and profoundly sustainable. Those who eat at Max Stiegl don't just taste origin but also attitude.
